Hummus

Blend together:

2-3 cloves garlic
large handful parsley
2 chopped scallions
31 oz. Canned chickpeas, drained
6 Tblsp. Tahini
6 Tblsp. Lemon juice
3/4-1 tsp. Salt
optional: dash cayenned or cumin and more lemon

Yields 4 cups. Freezes well.
