Chicken Rolls with Mushroom Wine Sauce

Pound boneless chicken breasts flat.
Roll with slice of ham or proscuitto and cheese and tie with string.

Dip in Beaten Egg.
Dip in Breadcrumbs.
Place seam side down, secure with toothpicks and chill 4 hrs.

Bake at 350 for 45 minutes if refrigerated.
Bake for 1 1/4 hrs. if frozen.


Serve with Mushroom Wine Sauce:

Heat 2 T. flour in 2 T. butter.


1 cup chicken stock.
1/2 cup white wine
1/2 tsp. tarragon

Remove from heat and add:

1/2 cup half and half
1 egg yolk
