Indonesian Rice Platter for a Crowd

This serves an army.

Make yellow rice.
Cook 6 cups basamati rice in 9 cups water with 1 1/2 tsp. tumeric, according to rice directions.

For sauce, saute:

3 T. oil
2 chopped onions
3 T. grated ginger


4 1/2 cups smooth peanut butter
4 1/2 cups hot water
1/3 cup cider vinegar
1/3 cup soy sauce
1/2 tsp. salt
1/4 cup honey
1/3 cup lemon juice


Arrange greens or baby spinach or lettuce on bottom of plate.
Top with:

3-5 red peppers, sliced
3-5 green or green and yellow combination peppers, sliced
4-5 scallions
3-4 cans water chestnuts
3-4 cups pecans
3-4 cans mandarin oranges

Top with sauce.

Over top of entire platter for a dramatic effect, arrange:

shredded coconut
fresh pineapple chunks
wedges of lime and oranges
