Pistachio Rice

Boil 2 cups water  with 3/4 tsp. salt and add 1 cup basamati rice.

Cook for 20 minutes, remove from heat and add:

2 T. dried currants or golden raisins
1 1/2 T. dhopped pistachios
1 T. parsley
2 T. pistachio oil
1/4 tsp. pepper
