Vegetable Curry

Saute on high until seeds pop:

1/4 cup peanut oil
1 T. + 1t. black mustard seeds

Lower heat, add and cook until wilted:

2 large onions, chopped
4 tsp. cumin seeds
4 tsp. tumeric
2 tsp coriander
2 tsp. salt
1/2 tsp cayenne

Stir in 10 cups  vegetables ( cauliflower, broccoli, peas, carrots, etc. of choice)

Add 1 cup yogurt and serve.
