Spinach and Red Pepper Quiche

Make single crust for a nine inch pie. 
Set the crust in the pan, and crimp the edges.
Make filling and place in crust.

Filling

shred 1/4 cup swiss cheese (or other) over crust
add 1 cup blanched cauliflower
1/2 cup diced roasted red peppers

Mix together:

1 1/2 cups milk or half and half
4 eggs
3 T. flour
2 tsp. herbes de Provence
3/4 tsp. salt
1/2 tsp. pepper
10 oz. thawed, drained frozen spinach
up to 1 1/2 cups shredded cheese (sharp cheddar or gruyere)

Pour over cauliflower in crust.

Bake at 350 for about an hour, and let it stand at room temperature about an hour before serving.
