Mini Shrimp Empanadas

Prepare pie crust for 4 crusts.

Saute in 2T. oil for 5-6 min.:

1lb. small peeled shrimp
1/2 cup green pepper, chopped
1 cup chopped onion
1 clove minced garlic

Add:

16 oz. tomatoes, well drained and chopped
1T. parsley
1 T. cilantro
1 tsp. cumin
1/2 tsp. red pepper flakes
few dashed tabasco sauce
