Finnish Light Rye Bread - Suomalaisruisleipa

Heat 1 1/2 cups buttermilk with 2 T. butter and 1 tsp. salt
Cool and pour in mixer.
Dissolve 1 T. yeast in 1/2 cup lukewarm water with 1 T. honey and add to the cooled milk.
Add 2 c. rye flour; beat until smooth.
Gradually add 3 1/2 - 4 cups white brad flour.
Cover and let rest 15 min. with a damp cloth.
Knead with dough hook or by hand 5 min.
Proceed as for any bread dough.

Bake at 375 for 35 for 45 min.

This is a cakelike dough and makes 2 loaves.
