Stollen

Make a sponge:

Scald 1 cup milk.
Add 1Tablespoon instant dry yeast
add 3 c. white bread flour

Let rise, covered in a warm place until doubled, 1-3 hours.

Cream 1/2 lb. butter with:

4 oz. sugar
3/4 tsp. salt
3 large eggs
2 t sp. almond extract
2 tsp. lemon rind
2 tsp. vanilla

Add sponge gradually and knead into the dough:

24 oz. mixed dry fruits of choice:golden raisins, currants, dried apricots, etc.
5 oz. glace cherries

Add 2 1/2 cups bread flour. Knead 3 minutes.

Divide into two large or four small loaves, and roll into circle with rolling pin.

Brush with either butter or frangipani and scatter maraschino cherries over the dough. Fold over in crescent shape.

Bake at 375 for 20 minutes.

Dredge in confectioner's sugar and this will keep for a couple of weeks.
