Poke holes and drain 1 large can of whole tomatoes.

Together, cook:

3 cups oven roasted cubed potatoes
16 eggs, beaten

Butter a casserole dish.
Place eggs in dish and place tomatoes on top.
Cover with orange cheddar and bake until cheese melts.
