Poach eggs.
Serve over a bed of steamed spinach.

Top with white wine sauce.

For white wine sauce, whisk together:

juice of one lemon
1 cup mayonnaise
1/3 cup white wine
1 T. Dijon mustard
1 1/2 T. regular mustard
For a thicker sauce, mix in some sour cream.
