Mix together:
1 1/2 cups white unbleached flour
3/4 cup flaxseed meal
3 1/2 cups oat bran
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamonStir in:
1 1/2 cups shredded carrot (for the lazy, use baby food carrots)
2 shredded peeled apples
1/2 cup raisins
1 cup nuts
3/4 cup milk
2 eggs, beaten
1 tsp. vanillaFill muffin tins 2/3 up side of pan...makes about 20 muffins. Bake at 350 for 20-25 min.
NOTE on FLAXMEAL: can substitute 1 1/2 cups flax meal for 1/2 cup butter or oil in baked goods.
These muffins freeze well.
