Marinate 4-5 lb. salmon at room temperature for 1/2 Hour in the following Marinade:
6 Tablespoons soy
4 T. hoisin sauce
4 T. olive oil
2 T. lemon juice
4 cloves garlic
2 T. fine chopped scallion
2 T. grated ginger
1/2 tsp. PepperBake on foiled sheet pan in middle oven rack at 375 for 20 min.
Serve with Hollandaise sauce
Hollandaise Sauce
Whisk together:
6 yolks
4 T. water
2T. lemon juice
2 T. cider vinegar
Add 2 sticks of unsalted butter cut into small chunks all at onceTransfer to a LOW simmer on a double boiler and whisk 6 min. until thick. If the heat is too hot, it will break down and not solidify.
