Roast 2 6-7 lb. turkey breasts.
Cool and dice.Toss with:
6 cups mayonnaise
2 cups white wine, dry
1 1/2 cups mango chutney
1/2 cup curry powder
6 T. fresh lemon juice (2 lemons)
1 T. ground ginger
18 scallions, chopped
6 cups celery, chopped (2 bunches)
3 cups dried cranberries
4 cups roasted salted cashews
