Curried Rice Salad

Cook 2 cups basamati rice according to directions.

Soak 1/2 cup dried black currants in water.

Lightly toast 1/2 cup pistachio nuts

Make dressing:
   1 cup peanut oil
   1/4 cup or more lemon juice
   2 tsp. salt
   1 T. curry powder
   1 tsp. cumin
   1/2 tsp. corianter
   1/2 tsp. pepper
   pinch cayenne

While rice is still warm, add drained currants, nuts and dressing.

Add:
   4-6 sliced scallions
   1/4 cup finely diced red and or yellow pepper and Vidalia onion if desired

Adjust lemon juice and salt if desired.
