In pan, heat:
3/4 cup butter
3 T. ginger
1 T.+1tsp. curry
1 T.+1tsp. lemon peel
1 1/2 cups diced red pepper
1 1/2 cups scallionsAdd, bring to boil, then simmer for 18 min.:
4 cups long grain rice with 6 cups water.
Add 3 cups pea, and salt and pepper to taste.
