Cook 1 lb. red potatoes in water for 25 minutes.
Drain and cool. Dice into 1/4 inch pieces.Add:
1 cup cooked peas
1 cup diced red cooked beets
1/2 cup diced sweet onion
1/2 cup diced celery
1 cup mayonnaise
salt and pepper to taste
