Russian Potato Salad

Cook  1 lb. red potatoes in water for 25 minutes.
Drain and cool. Dice into 1/4 inch pieces.

Add:

1 cup cooked peas
1 cup diced red cooked beets
1/2 cup diced sweet onion
1/2 cup diced celery
1 cup mayonnaise
salt and pepper to taste
chopped lettuce if desired

Garnish with your favorites:

2 hard boiled eggs
chopped parsley
anchovy filets
ham or smoked salmon strips
rinsed capers
sliced gherkins
