Cucumber Potato and Mint Soup

Saute 1 large onion, chopped in 1/4 cup butter for 15 min.
Seed, Peel and Grate 2 1/2 lb. cucumbers.
Cook all of above for 30 min. with:

1 lb. chopped boiling potatoes
4 cups chicken broth

Chill overnight or for several hours, and puree in blender or processor.
Add:

1/2 cup heavy cream
1/4 cup fresh mint or more if desired (some prefer to use 1/4 cup dried mint and 1/4 cup fresh)
3 T. red wine vinegar
1/4 cup honey
1/2 tsp. pepper
salt to taste
