Curried Chicken Soup

Heat 1T. vegetable oil

Add and saute for 5 min.:

1/2 chopped onion
2 cloves garlic
1 T. chopped ginger root

Add 2 T. curry and saute for 2 min. more.

Bring to a boil and simmer with:

14.5 oz. chicken broth
1 can coconut milk
2 T. soy
1 t. sugar

Add and simmer for 10 min. or until chicken is cooked:

1/2 lb. cubed boneless chicken
1 cup mushrooms

Add and cook for 5 min.:

1 chopped tomato
2 T. cilantro
juice of one lime
1/4 tsp. salt

Serve with wedge of lime and coconut if desired.
To make your own coconut milk,  combine 2 cups water and 2/3 cup unsweetened coconut in a blender.  Strain and use.
