Harvest Borscht

Boil and Simmer for an hour:

1 lb. meaty beef bone
6 c. beef broth
2 cups white wine
1 1/2 cups tomato sauce
(optional 1T. garlic plus 1 T.gingeroot)

Meanwhile, in large frying pan, saute for 7 minutes, then add to broth:

1 1/2 cups carrots, large julienne sliced
3 stalks celery sliced
4 cups onions, large juilienne sliced
2 peeled beets,  large julienne sliced

Peel and slice 2 more beets and set aside with 1 T. balsamic vinegar and add to broth

Add cubes of potatoes if desired (the Polish and Ukranian version)

Add 1 T. honey and cook for 1 1/2-2 hours longer.

Serve with a dollop of sour cream or yogurt and dill.
