Combine 1 cup bulgur wheat and 1/2 cup dried cranberries in bowl with 1 cup boiling water for 30 minutes.
Fluff and add:
1/2 cup chopped parsley
1/4 cup minced red onion
1/4 cup lemon juice
2 T. shopped walnuts, toasted
2 T. fresh mint
1 1/2 T. walnut oil
3/4 tsp. salt
1/4 tsp. pepper
