Boil 2 1/2 cups water and add:
1 cup long grain rice
1/2 cup chopped dried pineapple
2 tsp. butter
1/2 tsp. grated lime rind
1/4 tsp. salt
Cover and reduce heat and cook for 20 minutes.Stir in:
1/4 tsp. fresh cilantro
1 T. scallions or chives
2 1/2 tsp. fresh lime juice
