Make single crust for a nine inch pie.
Set the crust in the pan, and crimp the edges.
Make filling and place in crust.Filling
shred 1/4 cup swiss cheese (or other) over crust
add 1 cup blanched cauliflower
1/2 cup diced roasted red peppersMix together:
1 1/2 cups milk or half and half
4 eggs
3 T. flour
2 tsp. herbes de Provence
3/4 tsp. salt
1/2 tsp. pepper
10 oz. thawed, drained frozen spinach
up to 1 1/2 cups shredded cheese (sharp cheddar or gruyere)Pour over cauliflower in crust.
Bake at 350 for about an hour, and let it stand at room temperature about an hour before serving.
